DIY lime pickle at home

Home made lime or lemon pickle - long self life!
Ingredients:
- 3 or 4 limes
- mustard oil - 300ml
- salt as per taste
- fennel seeds - 1 teaspoon
- mustard seeds - 1 teaspoon
- carom seeds - 1 teaspoon
- pepper seeds - 1 teaspoon
- cumin seeds - 1 teaspoon
- turmeric powder - 1/2 tea spoon
- dry red chili (optional 1 or 2)
- small glass jar
Process 1:
- Cut the limes into equal pieces (one lime into 4 pieces)
- marinate the cut limes in salt and turmeric and put it in the sun for 3 days
- In a pan - Dry roast the spices fennel, cumin, pepper, carom, mustard seeds for 3-4 mins in medium heat
- crush the spices but not to a fine powder. Add this spice mixture to the lime pieces along with salt. Optionally add red dry chilies if you prefer it.
- heat mustard oil in a pan and once it is lukewarm transfer it into a Glass jar.
- Add the lime pieces with the spices and salt into the jar - taste to see if more salt is needed. Squeeze the lemon pieces a bit.
- Put this glass jar in the sun for next 10 - 12 days for 2/3 hours daily. Toss and turn the lemon pieces regularly in the jar and squeeze it a bit. Your amazing home made pickle is ready to be served.

Process 2:
- Cut the limes into equal pieces and add a lot of salt to it. Put it into a glass jar and closed the lid very tight. Keep it over night.
- Next day, In a pan - Dry roast the spices fennel, cumin, pepper, carom, mustard seeds for 3-4 mins in medium heat
- Heat oil in a pan. Once the oil has cooled down completely pour the oil and the spice mix into the glass jar.
- Mix everything well, add turmeric powder and taste to see if more salt is needed. Optionally Add dry red chilies if you prefer
- Put this glass jar in the sun for next 10 - 12 days for 2/3 hours daily. Toss and turn the lemon pieces regularly in the jar and squeeze it a bit. Your amazing home made pickle is ready to be served.
