Ingredients:
- Ripe tomatoes - 2 [roughly chopped]
- Jaggery/Sugar - 3tbsp
- mustard oil 1 tbsp
- crushed peeper 2 tbsp / green chilli 2
- pinch of turmeric
- salt as per taste
- 1 tsp each of mustard seeds, cumin seeds, kal jeera, fennel seeds
- 1/2 tsp each of cardamon / cinnamon powder [optional]
- 1 baby potato boiled [optional]
Cooking procedure:
Heat oil in a pan. Add mustard seeds, cumin seeds, kal jeera, fennel seeds. Once mustard seeds starts to splutter add tomatoes, turmeric and salt. Cover and cook until the tomatoes are 100% cooked , add a little bit of water if needed. Smash the boiled potato and add it to the mixture. Add jagery/sugar and crushed peeper / chillies. Cover and cook until everything is properly cooked - taste to see if salt is alright. Add Cardamon / cinnamon powder. Garnish with hot phulkas, luchi, roti or naan.
