Bottle gourd and coconut milk curry recipe

Ingredients:

  1. Peel and cut bottle gourd in cube size pieces - 2 cups
  2. Cut 1 or 2 small sized potatoes into cube size pieces
  3.  1 tsp cumin seeds and mustard seeds
  4. 1 carrot cut into cube size pieces
  5.  a few curry leaves
  6. 1 small onion roughly chopped
  7. crush few pods of garlic and 1/2 inch ginger [optional]
  8. 1/2 tsp crushed pepper [optional]
  9. salt as per taste
  10. coconut milk 1 cup
  11. curd 3/4 cup
  12. fresh coriander roughly chopped
  13. coconut oil 1tbsp

Cooking Procedure:

Add water and boil bottle gourd, carrot and potatoes in a pan. Once they are properly cooked add salt to it. In a pan heat coconut oil add mustard seeds and cumin seeds. When mustard seeds starts spluttering add onions and ginger garlic and cook until they are translucent. Also add curry leaves and pepper. Now transfer the previously boiled or cooked gourd, carrot and potatoes into this pan and lower the flame. Add coconut milk into the pan and let it cook in low flame. Whisk the curd and pour it into the pan. Cook for a few minutes and you are done. Garnish with freshly chopped coriander!!
